Aaaaah I feel bad already!
Here are a few ideas that work pretty well:

- hashed roman lettuce with roquefort (or the strongest blue cheese you can find), grapefruit, walnuts, apples, topped with a vinaigrette made of dijon mustard, balsamic vinegar and a mixture of olive and walnut oil

- oak/red leaf lettuce with minced bacon/lard and garlic croutons, topped with the above vinaigrette mixed with maple syrup

- arugula mixed with hand-torn smoked salmon bits and hemp seeds, topped with a mixture of lime and black pepper

- shrimps, avocado dice and boiled corn kernels, with a splash of light lemon-flavored mayonnaise on the side, all topped with chopped parsley and served on nice big lettuce leaves


You may add pine nuts in any of the above recipes.

That's as far as my guilty imagination is willing to go for now :)

I don't know, but make sure you don't forget to toss your salad.
