It's more a question of freshness with sushi. |

| Waldman's is over... there's no more fish market there.
You should worry more about correct filleting techniques and just try to find any fresh fish. I highly recommend Tuna because it tastes best, but it's pricey, so good sockeye Salmon is a good alternative. If you intend to use shrimp make sure you cook it... this is NEVER to be ingested raw, but then again I think people probably know that. It is essential that you have a sharp knife. Don't get the fish that's already filleted because it's more expensive.
And stay away from the Fugu... you aren't ready for that yet. |

| Tuna and salmon are good, but if you want to be more ecologically friendly, try with smaller fishes, such as mackerel. (yum, mackerel!)
Since they are smaller, they reproduce faster so there's less danger of overfishing.
Also, they aren't top predators like tuna, so they're less contaminated with mercury or other pollutants.
I've never made sushi myself, but I've read somewhere that it's better to buy fish that was in the backstore, or frozen, than on the shelves, because less people touch it... Is it true? |

but I discovered that the salmon is not coming from the sea
it come some micro culture... even the one they are calling the
'biologic'
for them biologic meant that the fish wasn’t fed with artificial product
but real fish... it doesn’t mean that the fish lived in the sea...
